Sweet Potato Egg in a Basket
In college I absolutely loved an egg in a basket for breakfast, but now that I don't really eat processed grains (sometimes I do, because duh, I'm human) I often give up on my craving for this breakfast staple. Today, I was determined to make something that resembled my favorite morning meal. Egg in a Sweet Potato Basket? Egg in Sweet Potato Toast? What I'm going to call it is another story...
INGREDIENTS
- 1/3 Medium Sweet Potato - Spiraled or Grated (I used my veggie spiralizer)
- 1 Egg
- 1 TBSP Grass-fed Butter
- Salt and Pepper to Taste
- Literally that's it guys!
INSTRUCTIONS
- Melt butter in a frying pan on medium-high to high heat. Once melted add grated sweet potato, stirring and flipping occasionally until small brown spots appear on your taters. Clump potatoes together into a circle making a small (SMALL) opening in the center. Crack egg and cook to your liking. To cook faster, I place a small pot cover over the egg.
