Sweet Potato Banana Pancakes
Last night before bed, I was thinking about food... imagine that. I started concocting ideas for breakfast in my head and came up sweet potato banana pancakes. So healthy, so good, and so perfect for the weekend.
INGREDIENTS
- 1/2 Sweet Potato (Large)
- 1 Egg
- 1 C Cashew Milk or Milk of Choice
- 1/2 Medium Banana
- 3 TBSP Chia Seeds
- 1 Scoop Collage Peptides
- 3 TBSP Ground Flaxseeds
- 1 tsp Cinnamon (...or more, I always go heavy on cinnamon!)
- 1 TBSP Vanilla Extract
- 1/2 tsp Salt
- TOPPINGS OPTIONAL: Blueberries, Other 1/2 of Your Banana, Maple Syrup, Blueberry Jam, Organic Yogurt
INSTRUCTIONS
- Roast half of a sweet potato in the over for about an hour or until soft inside. You can also save time by microwaving it. Make sure to poke some holes with a knife all around the potato to release moisture and pressure.
Once cool, scrape insides (they should feel like mashed potatoes) into a large mixing bowl. Add Flaxseeds, Chia Seeds, Collagen Peptides, Milk, Vanilla, Salt, and Egg and blend together. I used a hand blender, but you can always use a whisk. Beat until smooth.
In a large fry pan, heat 1 TBSP coconut oil or grass-fed butter and scoop mixture into 3 inch rounds (or however big you'd like). Just like regular pancakes, brown on one side and flip. I added a fried egg and some lox to my meal this morning as I'm kind of a salty girl.
