Superfood Salad
Do you ever get to a restaurant and think, why would I waste my time with a salad? I do that often, but usually have food envy when my friend's fresh green plate makes it to our table. When I was in Houston last Spring, I made myself explore a new healthy spot for eats every day at lunchtime. I believe on the third day, I found the Dandelion Cafe in the heart of Bellaire and never went anywhere else!
They have this incredible Superfood Salad that I just had to try to recreate. 
INGREDIENTS
- 1 C Spinach
 - 1/2 C Arugula
 - 1/2 C Baby Kale
 - Blueberries
 - Cashews
 - 1/2 Avocado
 - Roasted Beets
 - Chia Seeds
 
Dressing
- 2 TBSP Olive Oil
 - 1 tsp White Miso
 - 1 tsp Tahini
 - 2 TBSP Water
 - 1/2 tsp Garlic Powder
 - 1 TBSP Rice Vinegar
 - Salt & Pepper to Taste
 
INSTRUCTIONS
- Combine all ingredients in a large salad bowl. In a small bowl, whisk together ingredients for dressing. Top, toss and enjoy.
 

WHY IS IT GOOD FOR ME?
- Berries - High in vitamin C, folate and potassium. All good for a soon to be mom!
 
- Beets - Beets are high in iron, vitamin C, fiber and essential minerals like potassium and manganese which are all critical for your healthy pre-pregnancy body and/or developing baby.
 - Cashews - Cashews provide a number of essential vitamins and minerals, specifically vitamin K. Vitamin K is known for aiding in hormonal balance and also has been shown to promote the development of a healthy uterine lining. Eat cashews when trying to conceive and throughout pregnancy. Other foods rich in vitamin K: green leafy vegetables, Brussels sprouts, cabbage, broccoli, prunes and cucumbers.
